A home kitchen with a stainless pro-style gas range and a matching hood above it against a light tile backsplash, the grates lifted off and laid on a folded towel on the counter, a technician seen only from the shoulders down wiping a brass burner cap with a soft cloth, a clean baffle filter leaning beside the towel, all burners off, soft daylight.

Is yours
a cooking appliance?

Cooking appliances are the group where upkeep is split between grease, flame and water. A gas range or cooktop depends on clean burner ports, caps seated square and an igniter that sparks crisply; food boiled over into a port or a cap knocked a few degrees off turns a blue flame yellow and lazy. An electric or induction surface depends on a clean underside, free vents and a fan that still spins. Wall ovens and the oven under a range need a door gasket that meets the frame all the way around, hinges that close the door square and a cavity that is not carrying last year's spills into every bake. The hood above them catches grease in mesh or baffle filters, and once those clog the fan works harder and pulls less. Microwaves mounted over a cooktop carry grease filters too, and recirculating models a charcoal pad that has a replacement date. Steam and combination steam ovens bring the one water problem in the group: scale in the boiler or the evaporator tray, which the maker's descaling routine is there to prevent. A maintenance visit on this group cleans and reseats the burners, watches every flame, checks the gas connector and shutoff with a leak detector, washes or swaps the hood filters, runs the descaling program with you and notes the model and date of each job for the next visit.

Close view of a home gas cooktop with its cast iron grates lifted off, one brass burner head exposed with its cap set aside, a technician's hand seen only from the wrist down clearing a port with a thin straight pin, every burner off and no flame, a small spray bottle of leak detector on the counter, soft daylight. What fails on a cooking appliance

How to tell

01

It belongs to this group if it heats food by flame, element, induction, microwave energy or steam, or pulls cooking air away through a filter above the surface.

02

Gas models have burner caps, grates and a flexible connector with a shutoff valve behind or beside the appliance; electric ones have a dedicated circuit and no gas line.

03

A hood or a microwave over the cooktop has removable metal filters on its underside, and a recirculating model also has a charcoal pad.

04

A steam or combination steam oven has a water tank or a fixed water line and asks for descaling on its display at intervals.

What fails
on this design.

On a cooking appliance: burner ports blocked by spills, igniters coated with grease, hood filters loaded with grease, scale in steam systems and worn door seals.

The problems it shows

Burner ports blocked by spills

Sauce and sugar that boil over run into the small ports around a burner head and bake there. The flame then burns yellow in patches, lifts off the head or refuses to cross to the far side, and pans heat unevenly even on high.

Igniters coated with grease

The small ceramic spark electrode next to each burner picks up a film of grease and cleaner. A dirty igniter clicks without catching, or keeps clicking after the flame is lit, until the tip is cleaned and dried.

Hood filters loaded with grease

Mesh and baffle filters trap grease so the fan and the duct do not have to. Once they are loaded, airflow drops, the motor runs hotter and louder, and smoke hangs over the cooktop instead of rising into the hood.

Scale in steam systems and worn door seals

A steam oven boils water every time it runs, and hard water leaves scale in the boiler and on the evaporator tray. On every oven, the fiberglass or silicone door gasket frays with heat and cleaning, and heat escapes through the gap.

Getting at it,
and whether to.

Let the cooktop and the oven cool completely before the visit, and leave the grates, caps and hood filters in place so the technician sees how they were sitting.

What services cost

On the visit

  1. Tell us whether each appliance runs on natural gas, propane or electricity, and where the gas shutoff valve is, if you know.
  2. Clear the counter beside the cooktop and the space under the hood so filters can come down and grates can be laid out.
  3. Have the descaling product the maker recommends on hand for a steam oven, or tell us the model so the right one can be brought.

Repair or replace

Upkeep on cooking appliances is inexpensive, and its payoff is safety as much as money: a clean burner lights on the first click, a clean hood filter keeps grease out of the duct, and a descaled steam oven keeps its boiler. Pro-style ranges and wall ovens are built to last decades when that is done. If the visit turns up a gas valve that leaks at its stem, an oven that will not hold temperature or a control that has failed, that is a repair, and our sister repair site for that appliance handles it.

Questions about
cooking appliances.

What should a healthy gas burner flame look like?
Steady and mostly blue, with small, even cones all the way around the head and at most a faint trace of orange at the tips. Tall yellow flames, soot on the pan or a flame that lifts away from the ports means the burner needs cleaning or adjusting.
How often do hood filters need washing?
Mesh filters over a busy cooktop usually need it every month, baffle filters a little less often, and many are dishwasher-safe according to their makers. Charcoal pads on a recirculating hood cannot be washed and are replaced on the schedule in the manual.
Can a steam oven skip its descaling reminder for a while?
The oven will usually keep working, but scale keeps building while the reminder is ignored, and some models limit steam functions until the program has been run. On hard water it pays to descale when asked, with the product the maker specifies.
